| Dessert - Keto Chocolate Mousse
this is a very simple recipe and doesn't take much time at all to prepare, and your whole family can enjoy a delicious, sugar-free dessert!
Here's how it's done:
Ingredients
- 1 cup heavy whipping cream
- 2 tablespoons unsweetened cocoa powder
- 1/2 teaspoon instant espresso powder
- 1/2 teaspoon almond extract
- 1 tablespoon stevia powder
- 1 pinch fine sea salt
- 2 tablespoons dark chocolate chips, or to taste (optional)
Instructions
Combine cream, cocoa powder, espresso powder, almond extract, stevia, and sea salt in a large bowl. Beat using an electric mixer until mixture is light and fluffy and holds its form. Transfer to a serving bowl or individual serving dishes.
Serve sprinkled with chocolate chips plus additional cocoa powder or espresso powder to taste.

Breakfast – Zucchini Hash Browns with Eggs Ingredients
- 4 eggs
- 1 cup sliced zucchini
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 tablespoon olive oil
- Salt and pepper
Serves 1, Prep time 5 minutes, Cook time 10 minutes.
Directions
For Hash Browns
- Heat oil in skillet
- Mix together zucchini, 2 slightly beaten eggs, salt, pepper, garlic powder and onion powder.
- Drop mixture one spoonful at a time into the hot skillet
- Brown one side, and flip to brown the other

- Cook two eggs in your favorite style
- Serve with hash browns

Ingredients
- 4 ounces cooked and flaked salmon
- 1/4 cup chopped celery
- 1 teaspoon chopped fresh dill
- 1 tablespoon chopped pecans
- 1 large lettuce leaf, in tact
- Salt and pepper
Serves 1, Prep time 10 minutes, Cook time 10 minutes.
Directions
- Set the lettuce leaf aside, and combine all the other ingredients in a mixing bowl.
- Mix well and add salt and pepper to taste.
- To serve, wrap the salad mixture inside the lettuce leaf.
Dinner – Shrimp and Artichoke Heart Skewers
Ingredients
- 12 Large shrimp
- 1/4 cup Artichoke hearts
- 1 clove Garlic, minced
- 1 tablespoon Olive oil
- 1 tablespoon chopped fresh Parsley
- 1 ounce crumbled feta cheese
- 1/2 cup shredded lettuce
Serves 1, Prep time 10 minutes, Cook time 10 minutes.
Directions
- Toss the shrimp and artichoke hearts with the olive oil, garlic, and parsley.
- Thread onto skewers.
- Cook the skewers on a preheated grill (high heat) for about 2 to 3 minutes on each side - until shrimp is pink and cooked through.
- Serve the skewers on the lettuce, topped with the feta cheese.
